4 C mixed greens
1 Red apple, sliced very thin
½ small red onion, sliced thin
small container Gorgonzola, crumbled
Caramelized Walnuts:
½ C coarsely chopped walnuts
1 ½ t butter
1/8 cayenne pepper
1/8 t cinnamon
¼ t salt
2 T honey
Dressing:
2/3 C cranberries
¼ C sugar
½ C Apple cider vinegar
1 t Dijon
¼ C oil
¼ t salt
fresh pepper to taste
Prepare salad in bowl.
Cook walnuts, butter, cayenne, cinnamon, salt, and honey over medium heat until
light brown. Transfer and cool on wax paper.
Heat cranberries, sugar, and cider vinegar over medium heat until cranberries
pop.
Remove from heat.
After cranberry mixture cools, place in food processor and add dijon, oil,
salt, and pepper.
Process well and pour over salad just before serving.
