Some Onions
Some Garlic
Some Veggies (broccoli, zucchini, carrots, green bean, spinach, corn.... you
choose)
Good amount of dried Basil and Oregano
1-3 Bay Leaves
Water
Diced Tomato and/or Tomato Sauce
Fresh Tortellini
Parmesan Cheese
In large soup/stock pot saute in butter a bunch of onions and garlic until
soft.
Continue by adding any vegetable you like: Broccoli, zucchini, carrots, green
beans,
spinach, corn. I like to use whatever is fresh and plentiful.
Add a good amount of dried basil and oregano and a bay leaf or three.
Add diced tomatoes and/or tomato sauce until it looks right. If it is too thick,
add some water. Let it simmer for a while.
Just before eating, add fresh tortellini-when it's cooked, serve in bowls with
fresh parmesan sprinkled on top.
Variation: add sliced kielbasa for more protein.
